Bioactive Compounds Team

This laboratory is engaged in the analyses of the structures and states of bioactive compounds in agricultural/forestry/fishery products and food ingredients. Our research objects are crop seeds, plants, and fruits during storage, processing, distribution, and cooking, or after intake. We also handle chemical compounds related to the sites where agricultural/forestry/fishery production and food processing take place. For analysis, nuclear magnetic resonance (NMR) spectroscopy and mass spectrometry (MS) are used, and development of a new analytical technique is one of our study themes.
